Food and beverage as well as banquet operations are very complex and depending on the size of the lodging property can represent a significant share of the property’s revenue. You will read the scenario and based on your reading and course work, respond to the checklist items.
Scenario: The Basil Hotel is a complete resort property and has four restaurants, banquet facilities, and two (2) bars.
A client has reserved 300 rooms for a wedding with the wedding banquet reserved for the main hotel ballroom on Saturday night. The banquet manager asked the new purchasing manager the day before the banquet to confirm the 210 steak orders and the 90 Swordfish orders for the banquet. The purchasing manager calls the banquet manager in a panicked state saying, “I’m sorry, I thought this order was for 260 steaks and 40 Swordfish.”

You must proofread your paper. But do not strictly rely on your computer’s spell-checker and grammar-checker; failure to do so indicates a lack of effort on your part and you can expect your grade to suffer accordingly. The paper must be neatly formatted, double-spaced with a one-inch margin on the top, bottom, and sides of each page. When submitting hard copy, be sure to use white paper and print out using dark ink. If it is hard to read your essay, it will also be hard to follow your argument.
